I was away... sorry it took so long to reply.

Since iceboats don't heel as readily as a soft water boat, they don't spill the wind so fast, either. So, the pressures are much greater on an iceboat rig, and usually destroy most summer adaptions. I literally blew up a fiberglass windsurfer mast on an experimental boat... even though it was stayed!

Although the Sunfish rig is stronger than the Snark, I could imagine the same thing happening, I'm afraid. The Sunfish mast is fairly strong, as I remember, but the spars for the lateen might not survive. Sorry I couldn't be more positive, but I would hate to see you risk another rig.
