Did you literally mean "skiis", or were you referring to blade "runners" for the ice? I've seen little sucess with skiis for snow use, except in the lightest standup windsurfer conversions.
The list of links at the Icester site will give you many other ideas... one of the finest two seaters is the Nite class boat. The Nite can be built from plans, out of wood, or made with purchased fiberglass fuselage. Check out the Zaby (not plans, though, it's an assembled boat), and the Isabella.
